I love pancakes!
When I first began doing Trim Healthy Mama I read the recipe for their E pancakes and kept on going. The idea of cottage cheese being in pancakes bothered me… a lot!
I stopped doing THM for while and when I decided to jump back in I re-read the book and low and behold that E pancake recipe was still there staring at me! O.O
What’s a girl to do? With a renewed spirit thanks to Philippians 4:13 I decided to give it a try and boy howdy! Can we say Yummy!
They are so delicious that I suddenly found myself eating a lot more E breakfasts. 😉
For the blueberry syrup I just heated some frozen blueberries in a pot with a little bit of water, pure white stevia, a dash of sea salt and sprinkled a little glucomannan. I heated it on medium until it was warm and thickened to my liking. Then I took a couple Tbsp. of 0% fat Greek yogurt, added a dash of vanilla and sweetened it with pure white stevia. I topped the warm pancakes with the yogurt and poured the blueberry syrup over it. Oh my ladies! Get ready to be very happy!
I don’t know how Serene and Pearl came up with this recipe. I mean it is a wee bit odd but it is Amazing!! They have the feel and taste of real (white flour) pancakes without the white flour!
